Turkey Salad and Starting Over

I stood at work in the quiet of the night and sniffled. My knife rapped over the cutting board chopping celery and onion and it was all I could do to not weep. Don't cut a finger off, I thought to myself, that's the last thing I need right now.
My heart swelled in my chest with unbearable pain. My partner and I broke up. There, I said it. In terms of a true break up it was probably the most peaceful, loving break up in the history of break up's. The details of it all I will keep private from the internet, and keep those details close to my heart only.... but.... it was necessary.
This chapter is a time of self-reflection and growth. It's a time of best friendship, love, and peace. Inner peace. Oh, how I yearn for inner peace. Moving into a new season is difficult. Change is really hard for me. I used to be the person who said "I don't like deviations in my routine!" and back then I meant it. But today my outlook is a bit more different. Maybe change is good. Maybe deviations are necessary to learn life lessons. Maybe.... in order to get to our destination we have to roam... meander.... go off the beaten path.
Maybe we have to take a step back to take two steps forward? Maybe we have to challenge ourselves to get comfortable with the uncomfortable so that we can grow as individuals. Maybe we have to let go to feel love again one day. Maybe we have to hold our breath and hang on for this wild ride we call life.
Turkey Salad isn't something that most people go running to. Turkey is the meat that is most often associated with Thanksgiving. It's the "sleepy" meat because of the tryptophan in the meat that makes people sleepy after eating it. It's the meat that can get dry so easily if overcooked. But... section off a portion of boneless, cooked turkey breast (6-8 ounces) and you can make magic with this salad for sandwiches, wraps, and salads (of course). With just a few ingredients, this underrated salad can be a regular staple that is actually quite healthy!

Simple Turkey Salad
Ingredients:
6-8 ounces cooked turkey breast
1 onion, minced
4 stalks celery, diced
3 tablespoons mayonnaise
1 teaspoon Italian herbs
Instructions:
Using a food processor, finely dice the celery and onion and toss into a bowl.
Chop the turkey into bite sized pieces and process in the food processor into a fine mince.
Mix together and add mayonnaise.
Season with Italian herbs and mix to combine.
Chill and enjoy in a sandwich, wrap, or salad.
